Root Vegetables: a recipe for Post Lap Band Patients

Root vegetables are gaining more favor in cooking and health – nutrition content is high as well as high fiber and antioxidant content. In the winter months a warm saute or stew is enjoyed by families. We know our lap band patients are always seeking vegetarian recipes with high nutritional content. Here is an easy recipe for lap band and weight loss surgery patients to share.

 

 

Carrot and Parsnip Saute(Root Vegetables)

  • Carrots 5 medium
  • Parsnips 5 medium
  • Olive oil 2 tbls
  • Salt and pepper to taste
  • Fresh tyme 1 tbl
  • Fresh parsley 2 tbls
  • Butter pam spray

Cut parsnips and carrots lengthwise. Put olive oil in sauté pan. Put parsnips in first(they are denser than carrots) saute about 4-5 minutes, then put in carrots,salt and pepper to taste. Sauté until a nice golden on vegetables. Just before done put tyme and parsley on. Let cook about another 5 minutes. When finished before taking out of pan spray with pam to give a nice glisten and butter flavor.
