Fast (and Easy) Fish in Foil

Fast (and Easy) Fish in Foil
fish

Fish can be very healthy and versatile, and is a great source of protein. It may be better tolerated after lap band surgery than beef or pork due to it’s natural flakiness. Fish can also be a quick and easy dinner meal if you bake or grill it in a foil pouch, making cleanup a breeze.

Choose a fish you enjoy, such as tilapia, swai, cod, flounder, mahi mahi or salmon. If it’s frozen, defrost in the refrigerator or in cool water. Check for any remaining bones and remove. Cut about 12 inches of aluminum foil. Spray the foil with cooking spray to help prevent sticking. Place the fish in the middle of the foil. Here’s the fun part: choose your spices. You can change the flavors of your fish easily by changing the spices. Depending on where you are in your post gastric band surgery diet, choose the best spices and/or vegetables for you. Form the aluminum foil into a pouch by folding it, and place the fish in a preheated 400 degree oven for about 15-20 minutes, depending on the fish and the thickness. If it isn’t done after 20 minutes, rewrap and bake another 5 minutes, then check, and repeat as needed until done.

Here are some nice, quick ideas for seasoning besides plain salt and pepper:

  • Lemon juice and dill
  • Finely chopped cilantro and lime juice, maybe a dash of chili powder and cumin
  • Smooth mustard
  • Orange juice and minced shallots
  • Garlic and onion powder
  • Soy sauce and ginger
  • Italian seasoning mix
  • Tomato sauce, oregano, basil, and garlic

As you can see, the flavors can be easy to change, which gives you more variety in your meal planning. Vegetables are a nice addition when you are at the proper stage in your diet.
