Easy Teriyaki Salmon

How easy is it? It’s so easy you could cook in on a weeknight. After work. You could even cook it in the toaster oven. Or cook it on aluminum foil so you don’t have to wash a pan. That’s how easy it is.

Don’t equate easy with bad for you. Just because you can get this dinner on your table fast doesn’t mean it’s the same as fast food. Salmon is high in protein and loaded with good-for-you omega 3 fatty acids. Fast food companies can’t say that about their food. Unlike take out, this salmon is both quick and good for you, even if you are trying to lose weight. Especially if you pair it with a quick and healthy side like pre made cauliflower rice, asparagus, a baked sweet potato, or steamed green beans, or edamame.

Any leftover salmon can be added on top of a green salad for lunch the next day. This quick and easy lunch can be both filling and nutritious. The protein from the salmon and the fiber from the salad can be a great way to fill up without a ton of calories. Gastric sleeve, gastric bypass, and lap band patients often find that one of the key factors in weight loss is having access to high protein, low calorie, and easy to prepare food. This salmon recipe can be a “go-to” meal for both a dinner and a lunch for lap band, gastric sleeve, and gastric bypass patients.

Easy Teriyaki Salmon

  • ½ pound wild caught salmon
  • 2 tablespoons teriyaki sauce
  • ½ tsp sesame seeds, optional
  • 1 scallion, chopped
  • 1 lemon wedge
  • Salt and pepper to taste

Directions:

Preheat oven to 350 degrees. While oven is preheating, line pan with aluminum foil. Place salmon skin side down on foil. Season salmon with salt and pepper. Coat top of salmon fillet with teriyaki sauce. Bake for 15 minutes, or until salmon is cooked through. Transfer salmon to a plate. Sprinkle with sesame seeds and chopped scallion and squeeze fresh lemon on top.
